Ingredients:
20 oz. can pineapple crushed, juice packed 3 tbsp. flour 3 tbsp. sugar 3 tbsp. butter, melted 1 1/4 c. shredded Cheddar cheese 1 1/2 c. (about 25) crushed Ritz crackers
Instructions:
Drain pineapple, reserving 3 tablespoons of juice. Combine pineapple and cheddar cheese and arrange on bottom of greased 1 1/2 quart casserole dish. Stir together the flour and sugar, pour over pineapple/cheese mixture. Drizzle reserved pineapple juice over the top. Mix together the crushed crackers and melted butter; spread over the pineapple/cheese mixture. Bake covered at 350 degrees for 15 minutes. Uncover and bake 10 minutes longer. Great with ham! Great for brunch!
