Baked Apricot Chicken

Ingredients:
1 (12-ounce) jar Apricot or peach preserves 1 cup
1/4 cup Real Lemon juice
2 teaspoons soy sauce
1/2 teaspoon salt
1 2 1/2 - 3 lb. broiler-fryer chicken cut up
1 cup dry bread crumbs
1/4 cup margarine melted

Instructions:
Preheat oven to 350 F degrees. In a shallow dish, combine preserves, lemon juice, soy sauce and salt. Coat chicken with apricot mixture. roll in bread crumbs. Set aside remaining apricot mixture. In a greased 13 x 9 x 2 inch baking dish. Arrange chicken and drizzle with margarine. Bake uncovered for 1 hour or until tender. heat remaining apricot mixture and serve with chicken.
Refridgerate leftovers.
