Montana Mountain Soup


Ingredients:
3 cups cooked pinto beans
1 1/2 cups cooked white long grain rice
1 large tomato, skinned and diced
1 cup chopped bacon
3 small chopped onions
2 cloves garlic diced
1 tablespoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon chili powder
4 cups water

Instructions:
In a large pot, combine beans, rice and tomatoes. In skillet fry bacon, onion and garlic until well cooked.
Add with drippings to bean mixture. Add seasonings and 2 cups water. Cover and simmer, stirring occasionally,
for 1 hour. Add additional water, 1/2 cup at a time, during cooking. Serves 6 - 8.
