Caramels

Ingredients:
1 cup butter or margarine
1 pound (2 1/4 cups) brown sugar
Dash of salt
1 cup light corn syrup
1 (15 ounce can) sweetened condensed Milk (Eagle Brand)
1 teaspoon of Vanilla
* Note: do not add vanilla to mixture until moved from heat
** Heavy saucepan is very important in making candies as it is easy to burn or scorch and look pretty but taste terrible.

Instructions:
Melt butter in a heavy quart saucepan. Add sugar and salt, stir throughly. Stir in corn syrup; mix well. Gradually add milk; stirring constantly. Cook and stir 12 to 15 minutes over medium heat to firm ball stage (245 degrees F) Remove from heat and stir in vanilla. Pour into a 9X9X2 inch pan cool and cut into squares.
