Spinach and Gnocchi Soup

Warm and cuddly comfort food.

Ingredients:
Spinach and Gnocchi Soup

1 large chicken breast, cooked and diced
2 cups chicken stock
1 cups half-and-half (can use fat free)
1 stalk celery, diced
2 clove garlic, chopped
1 small onion, diced
1 bag fresh spinach, rinsed and chopped
1 tablespoon olive oil
1 teaspoon of sugar
1 teaspoon basil
2 tablespoons of Parmesan
salt and pepper
8 ounces potato gnocchi (I use Trader Joe’s)

Instructions:
Saute the onion, celery, onion and garlic in olive oil over medium heat for 5 minutes.
Add chicken, chicken stock, half and half, thyme, salt and pepper. Heat to a simmer, then add gnocchi. Gently simmer for 2 minutes. Turn down heat and continue a slow simmer for 10 minutes.
Add spinach and cook until spinach is wilted. (just a few minutes)
