Easy Banana Nut Bread

This recipe comes to us from Joyce Poole.

Ingredients:
1 box yellow or white cake mix
1 pkg, instant banana cream pudding mix
4 eggs
1/2 cup oil
1/2 cup water
2 ripe bananas, mashed
1 cup chopped nuts

Instructions:
Dump all ingredients except nuts into a mixing bowl. Beat one minute. Scrape sides of mixing bowl. Beat two more minutes. Gently fold in nuts.

Pour into 2 loaf pans which have been sprayed with pam. Bake at 350 degrees for 40-45 minutes until a toothpick inserted into the middle, comes out clean.
Let set in pan about 10 minutes before removing from pan.

Variations:
Pineapple nut cake:
Use pineapple cake mix and vanilla pudding mix, add 1 cup drained crushed pineapple, 1 cup chopped pecans.

Apple Cake:
Use spice cake mix and vanilla or butterscotch pudding mix, add 1 cup grated or finely chopped apples. This is good using black walnuts.

Cheryl's additions:
Add craisens and coconut to the mixture to taste... we add a handful of each.
