Blueberry Cobbler

Serves: 9

Ingredients:
3 1/2 cups fresh or 1 pound of frozen blueberries
1 tablespoon of cornstarch
2 tablespoons of fresh lemon juice
1 cup flour
1/2 cup plus 2 tablespoons granulated sugar, divided
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 1% milk
2 tablespoons butter, melted
3/4 cup boiling water

Instructions:
Heat oven to 350°F.
Spread berries in an ungreased 8 or 9 inch square baking dish or pan. Sprinkle cornstarch and drizzle with lemon juice; set aside. In a medium bowl, combine flour, 1/2 cup of sugar, baking powder and salt. Add milk and butter; stir just til combined (not smooth). Drop 9 mounds of dough onto blueberries. Pour boiling water over dough and fruit. Sprinkle with remaining sugar. Bake 45 to 50 minutes or until biscuits are golden brown and blueberries are bubbly.
