Cuban Sandwich Casserole

Another Recipe Influenced by our Miami Friends

Ingredients:
4 ounces Publix Swiss Cheese, cubed
2 tablespoons of fresh cilantro, coarsely chopped
2 Al Fresco Sweet Apple Chicken Sausage Links (6 oz)
4 oz Cumberland Gap Cooked Ham Cubes
1 (6.9 ounce) box of chicken flavored rice mix
1/2 teaspoon of Complete Seasoning
2 1/2 cups water, divided
1/4 cup Mt. Olive Dill Relish
2 tablespoons of extra virgin olive oil
1 teaspoon of mustard

Instructions:
Prep:
Cut cheese into small cubes
Chop Cilantro
Cut sausage into bite size pieces (wash hands)
Steps:
Preheat a large saute pan on medium high for 2 to 3 minutes.
Place oil in the pan, then add sausage and ham; cook 2 to 3 minutes or until lightly browned.
Stir in rice seasoning (from Mix), Complete seasoning, and 1/2 cup water; cook and stir 1-2 minutes.
Stir in rice, relish, mustard, 1 tablespoon cilantro, and remaining 2 cups of water, then cover; reduce heat to low and simmer 20-22 minutes(without removing cover) until rice is tender and water is absorbed.
Stir in cheese, the sprinkle with the remaining 1 tablespoon of cilantro. Server and Enjoy!
