Chicken Dijon

Ingredients:
4 - 6 chicken breast skinned and boned
3 tablespoons butter or margarine
salt and pepper to taste
1/4 cup dry white wine
1/4 cup chicken broth
1/2 cup half and half or evaporated milk
1 tablespoon French's Di jon mustard
1 tomato, optional

Instructions:
1. Cook chicken in butter 10 - 15 minutes or until tender. Season with salt and pepper. Remove to platter.
2. Add white wine and chicken broth to skillet. cook over medium heat. Stirring until reduced to about 1 tablespoon.
Stir in half and half and mustard. Heat. Dice tomato and add to sauce. Serve over chicken.
