Cowboy Meatloaf and Potato Casserole

Main course

Ingredients:
1 pound ground beef
1 package of premade refrigerated mashed potatoes
1/3 cup bread crumbs
1/2 large onion, chopped
1/4 cup BBQ sauce
1 large egg
2 tsp. Chili powder
1 cup bacon pieces
1 cup Mexican cheese blend
Salt and pepper to taste

Instructions:
Preheat the oven to 375* Fahrenheit (190* celcius). In a mixing bowl., combine the ground beef, chopped onion, bread crumbs, BBQ sauce, egg, chili powder and salt and pepper to taste. Mix throughly until well combined.
Press the meat mixture into a well greased 9x9 inch baking dish.
Bake in a preheated oven for 20-25 minutes. Or until meatloaf is cooked through.
Remove the dish from the oven and drain any excess fat.
Prepare the mashed potatoes according to package directions.
Spread cooked mashed potatoes over meatloaf mixture in the baking dish. Sprinkle the shredded cheese and bacon pieces evenly over the mashed potatoes.
Switch the oven to broil and place the dish back in the oven for a few minutes. Or until cheese is melted and bubbly. Serve and enjoy this hearty cowboy meatloaf and potato casserole.
