Vegetarian Casserole

One of the few Vegetarian Recipes in my Repertoire!

Ingredients:
1 large onion
2 Tablespoons of oil
2 cloves of garlic minced
1 teaspoon of oregano
1 bunch of parsley, chopped
8 ounces of fresh mushrooms, sliced
1/2 teaspoons of lemon juice
1 green pepper, chopped
1 teaspoon cayenne pepper
2 pounds of broccoli, chopped
1/2 cup cashews
1 1/2 cups of brown rice
1/2 cup Parmesan Cheese, Grated
3/4 pound of Swiss cheese, grated
1 cup plain non-fat yogurt

Instructions:
Preheat oven to 350 F degrees. Saute' onion in oil until clear. Add garlic, basil, oregano and parsley; then add mushrooms, lemon juice, green pepper, and cayenne pepper. Saute' for 5 minutes. Add broccoli and cashews, then stir. Remove form heat. Put half of the rice in bottom of a baking dish. Cover with 1/2 vegetable-nut mixture. Top with 1/2 of the grated Swiss cheese and Parmesan cheese. Repeat layers (rice, nut mixture and cheese). Spread yogurt on top. Bake 50 minutes. Serves 8 - 10.
