Tamale Casserole

Ingredients:
1 pound of ground beef
1/2 pound sausage
2 cups diced celery
1 clove of garlic, minced
1 cup chopped onion
1 can tomatoes, (28 ounces)
2 cups or 17 ounces of whole kernel corn
2 tsp. chili powder
1 tsp salt
1/2 cup cornmeal
1 cup sliced pitted olives
1 1/2 cup shredded cheddar cheese
* can leave out celery and olives and recipe will survive fine.

Instructions:
Combine first five ingredients in a dutch oven. Brown meat, stirring frequently.
Drain off fat.
Stir in tomatoes, corn, chili powder and salt. Reduce heat and simmer 15 minutes.
Gradually add cornmeal and cook over low heat until thickened. Stirring frequently.
Add Olives (I omit, because I don't care for them) Spoon mixture into lightly greased 2.5 quart casserole dish.
Bake at 350 F degrees for 40 minutes.
Remove from oven top with cheese and return to oven 5 minutes until the cheese melts.
P.S. I also leave out the celery for the same reason. ( I don't like it).
