Potato Salad

2000 Southern Living Magazine Annual Recipe (Page 195)

Ingredients:
5 hard boiled eggs, seperated
1 teaspoon salt, divided
3 green onions
1 cup mayonnaise
2 tablespoons sweet pickle relish
1 tablespoon of mustard
1/2 teaspoon of pepper


Instructions:
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. Peel potatoes, cut into one inch cubes, chopping egg whites, stir potato cubes, egg whites, 1/2 teaspoon salt, and if desired green onions. Mash egg yolks; add remaining 1/2 teaspoon salt, mayonnaise, relish, mustard and pepper stirring together til well blended. Gently stir into potato mixture. Cover and chill for 2 hours. Serve and enjoy!
