Potato Pinwheel Candy

A Mama Lewis favorite from Georgia Magazine from Amicalola Electric

Ingredients:
1 large baking potato,peeled,cooked and mashed
1 box confectioner's sugar
1 teaspoon vanilla extract
1/2 cup peanut butter

Instructions:
Reserve 1/2 cup confection's sugar (divided into 2 (1/4 cups to be used below).
Mix potato, confectioner's sugar, vanilla extract with a wooden spoon. until mixture resembles pie crust dough.
Sprinkle dough with 1/4 cup powdered sugar.
Sprinkle the other 1/4 cup powdered sugar over waxed paper and roll out dough into a rectangular shape.
Spread peanut butter over the dough and slowly roll into a log shape. Finished at about 1 inch in diameter.
Chill for a few hours and slice and serve.
